Fajitas

So I am getting bored with dinners. Not a big chicken fan but know we need to eat more of it and less red meat. So I got the bright idea to make chicken fajitas. One of my goals this year is to limit the processed food we eat. So instead of buying a seasoning pack or kit, I made it from other ingredients. I don't know how much healthier it is but I feel better knowing I tried. And like most things I cook, my fajitas aren't "normal". The jest of the recipe is: can low sodium kidney beans, tomatoes with green chilies, zucchini, summer squash, peppers, Portabella mushrooms, chicken, garlic, cumin, chilli powder, and I think that's all of it...

New Year's Resolution

So I started the year thinking I wanted something cool to do everyday this year. Then reality hit...who am I kidding that I'll do something everyday?!? (Especially since it was already the 2nd). It finally came to me today. I'll cook and post at least one new recipe or cooking adventure every week. This seems manageable and something I might actually do. But since this blog has been floating around and I haven't been able to do something regular even for a summer, we will see...
