Halloween











I have some other posts some where, but can't seem to find them. They were all for healthy fun. Well, here is a fun post! Teddy loves pizza on the weekend, the rest of us are getting sick of it. So this weekend I tried something different. English muffin "pizzas"!!

Slacker!!

So I haven't posted in a while and my goal is to get better at this, but we will see how long that lasts. So here are a couple of random yummy foods I have made recently.

Triple chocolate chip cookies = yummy!! Most of them were made to look like footballs. We used white icing to make the stitching. Had to have some football food for the first day of football. Teddy helped me decide what they were decorated as...

And if you ever have left over icing, it is GREAT to dip Teddy Grams or Annie's Bunnies in. Just one of my guilty pleasures.

I often make shepard's pie. It's a quick meal that everyone eats. I found this idea some where. Instead of putting mashed potatoes on it, I topped it with sweet potato tater tots. It was different, but in a good way. I tried to convince Jason that it was healthier too since it was sweet potatoes instead of white ones.

Yummy!!

So I forgot the name of this but it was super yummy and I was stuffed!! And even better, it was a make ahead. If you want the actual recipe, let me know and I'll post it. Until then, here is the general idea.

Sauté chopped onion, pepper and zucchini. Adding tomatoes and garlic when soft. Spray a 9x13 pan, chop up some bread. Pour mixture on top. Sprinkle with pram and swiss cheese. Combine can of evaporated milk, eggs, egg whites and dijon mustard. Pour on top. Cover and refrigerate over night. Then bake next day.

Black bean and avocado salsa

So back on my "health" kick. This came out of a Weight Watchers power foods cookbook. It's simple to make and figured I'd try it and bring it for lunch. One of my goals this year is to bring my lunch and avoid school food (sorry April!)!!

So here's the recipe: (my version)
1/4 sweet onion, chopped
1 small haas avocado, chopped
15 oz can drained and rinsed black beans
1tsp chili powder
1/4 tsp salt
2 tbsp fresh lime juice

Mix all together in a bowl

Eat with chips or they suggested putting corn tortillas in a cupcake pan and baking them to make cups to put it in. If you want the real recipe or how to bake the tortillas, let me know! Teddy helped take the picture, can you tell? ;)

1st "Healthy" Meal

Seasoned chicken and potato skillet

So it was yummy, but not picture worthy. Very monotone in color and not pretty or fun at all! Still not sure how it was healthy but it came from a Weight Watchers cookbook and worth 4 points per cup. Mind you a cup wouldn't be enough for a "normal" person. But it was an easy recipe...

Cooked chicken, I pre-cooked some chicken tenders in olive oil.
Potatoes and onions, I used some pre sliced ones you can find near the hash browns.
Brown the potatoes and onion mix in olive oil until tender.
Add thyme, sage, salt and pepper, and all spice.
Mix in chicken, 6 tablespoons fat free sour cream and 1 tablespoon dijon mustard. I also added some mushrooms.
Cook an additional 15 minutes and thats it.

Changing directions...

So I don't know how much more "fun" stuff will be posted. I only have 2 weeks left of summer vacation. :( And that's not even two full weeks! And a trip is included. But the real reason is I'm trying to go back to being healthy. We will see how well and how long this lasts. If/when I find any good, healthy recipes I'll post them here along with anything fun I make for the kids. Teddy has been obsessed with chicken noodle soup recently. There's not too much fun things you can do with that.

Crayon Muffins

Since Teddy was getting sick of "soft" things and milk shakes, we decided to make muffins. It's a cinnamon muffin/bread mix. We made it and then mixed in some M&Ms before cooking. The colors on the M&Ms melt, making it look almost like melted crayons. We put the icing that came with the mix on some of them.

























Spagetti Pie

So I haven't posted in a while, but there's a good reason. Teddy wasn't eating much of anything other than yogurt. Nothing really fun you can do with yogurt. Therefore I didn't make anything fun so he wouldn't feel left out.



Anyways, Saturday night we had spagetti pie. Nothing too fancy. Just baked spagetti with fun shapes cut out of red peppers. Teddy helped pick the shapes. His first request was for "his letter" (T).

Good Bye Tonsils

I know this looks like it should be on cakewrecks, and it honesly might end up there. I didn't make it but it's too fun not to post. The book we got to help explain what's going on to Teddy had a good bye party with a cake in it, so of course I ran with it! Even my mom thinks I'm a freak for this one!

Mater & Lighter da Queen

So we're having special dinners this week for Teddy. Last night was breakfast for dinner, meaning pancakes. To make it even more special, we had Cars pancakes. I had grabbed the molds the day before. So I made Tow Mater and Lightening Mc Queen (or as Teddy calls them Mater & Lighter Da Queen).

The best thing EVER!!! I have been asking for this stupid thing for over a year now at all major holidays. I finally bought it myself. I don't know why I didn't do this sooner, it was only $10. Anyways, it's a pancake pen. It lets you make things with the batter or easily pour it into the molds. LOVE IT!!!!

Father's Day

Father's Day Lawn Mower cupcakes

Chocolate cupcakes (because that's our favorite) with white icing, tinted green. We then took a Hershey "Treasures" candy for the body of the mown mower, M&M's for the wheels and top, and a piece of a black twizzler for the handle. I must admit, Teddy thought this was supposed to be a shopping cart.





We had the first set Saturday night, then Sunday night, Teddy wanted to decorate his and Jason's all by himself. This is his car, the two green M&Ms in the front are the headlights he told me.





And once again, I can't take a picture of Teddy's without Belle requesting one of hers. She couldn't wait to decorate so she threw two blue M&Ms on and started eating! That's my girl!!

Eggs in a nest...



Teddy doesn't like "red noodles" he likes the "yellow" ones. So I made a bird's nest out of the spaghetti for him and placed his meatball in the middle to look like an egg. However, he didn't like the meatball because it had "green stuff" in it. Belle ate his and then two more! :)

Toodles Lunch...



Teddy has been on a peanut butter sandwich kick. Just peanut butter, no jelly. Makes my mouth stick together just thinking about it. So today I made them in the shape of Mickey. Teddy then corrected me telling me it wasn't Mickey, it was Toodles.



Belle doesn't get peanut butter, she gets cheese. So I took the apple peels and made them into a "bow" so that hers would be Minnie. Or in our house "Mimmie."





Teddy ate the ear off his first. I made the comment about him not being able to hear anymore. He quickly informed me that Toodles was not real and bread can not hear. I think I'm in trouble!




And because I took a picture of Teddy's, Belle insisted I take a picture of hers. I guess this is proof they do occasionally eat what I make for them!






Teddy ate all his Toodles and wanted another sandwich. While I was making it he requested Pluto. I told him he was getting picky and mommy didn't think she could make a Pluto. So we compromised on a dog bone!

Pretty simple...macaroni & cheese mixed with steamed brocoli. Both kids love both foods. However EVERYONE segregated their noodles and brocoli, even Jason! :)

Lunch

I realized I can't publish posts from my IPad. So I'm having to post yesterday's and today's posts at the same time. I'm sure there's away to post from an IPad, I just need to figure it out.

Teddy's Palm Tree...





Teddy insisted he wanted a peanut butter sandwich today instead of pizza. So since he had been playing in the pool all morning, I decided to cut it out to look like a palm tree. Yeah, my palm tree needs a little work, I'll add that to my to do list for the summer. It almost became Phineas because it looks like more of his hair than a palm tree. And the sun is cut up apples.


For the Princess, who insisted on cheese...

She got a cheese tiara. Since I was cutting up apples for Teddy, I used some for the "jewels." I had this idea while watching Super Why. So, a Princess Pea tiara will be coming soon.


And once again, she didn't eat any of this. Maybe this goal won't last too long because of the kids, not me! :)



School's Out!

Today was the last day for students at school today. Therefore it was the last day that my kids have to be in "school" a full day! In order to celebrate summer we had "sunshines" for dinner.






It's a wheat bread round, with melted cheese. I then added mandarin oranges for the sun rays. Teddy thought it needed a face, so we added it with some of our mixed vegetables.


Now the only thing that would have made it better would be if the kids would have actually eaten them. I guess no more cookies for them at the "green store!"

Just the beginning...

As many of you know, I LOVE to cook. So my goal for this summer is to cook with and for my kids. I want to make fun (and healthy) meals that they'll enjoy! My actual goal is to do this at least twice a week. I tried to make it a realistic goal, so hopefully I can and will do it and maybe even more. I'll post the pictures up here as I go along. Maybe I'll even keep it going once I go back to school. First things first, let the summer begin!!
