Seasoned chicken and potato skillet
So it was yummy, but not picture worthy. Very monotone in color and not pretty or fun at all! Still not sure how it was healthy but it came from a Weight Watchers cookbook and worth 4 points per cup. Mind you a cup wouldn't be enough for a "normal" person. But it was an easy recipe...
Cooked chicken, I pre-cooked some chicken tenders in olive oil.
Potatoes and onions, I used some pre sliced ones you can find near the hash browns.
Brown the potatoes and onion mix in olive oil until tender.
Add thyme, sage, salt and pepper, and all spice.
Mix in chicken, 6 tablespoons fat free sour cream and 1 tablespoon dijon mustard. I also added some mushrooms.
Cook an additional 15 minutes and thats it.

Changing directions...
So I don't know how much more "fun" stuff will be posted. I only have 2 weeks left of summer vacation. :( And that's not even two full weeks! And a trip is included. But the real reason is I'm trying to go back to being healthy. We will see how well and how long this lasts. If/when I find any good, healthy recipes I'll post them here along with anything fun I make for the kids. Teddy has been obsessed with chicken noodle soup recently. There's not too much fun things you can do with that.

Crayon Muffins
Since Teddy was getting sick of "soft" things and milk shakes, we decided to make muffins. It's a cinnamon muffin/bread mix. We made it and then mixed in some M&Ms before cooking. The colors on the M&Ms melt, making it look almost like melted crayons. We put the icing that came with the mix on some of them.
Spagetti Pie
So I haven't posted in a while, but there's a good reason. Teddy wasn't eating much of anything other than yogurt. Nothing really fun you can do with yogurt. Therefore I didn't make anything fun so he wouldn't feel left out.
Anyways, Saturday night we had spagetti pie. Nothing too fancy. Just baked spagetti with fun shapes cut out of red peppers. Teddy helped pick the shapes. His first request was for "his letter" (T).
